After years in the corporate world of marketing, I found myself at my child’s S’mores-themed birthday party, staring at a marshmallow and thinking, “This could be so much more.” What started as a simple idea to elevate the humble marshmallow quickly turned into a full-blown passion—one that led to the opening of Texas’ very first marshmallow café.

For years, our café was more than just a shop—it was a community hub. A warm, whimsical space where families gathered, regulars popped in for their favorite treats, and curious newcomers discovered just how fancy a marshmallow could be. We served up bold, unexpected flavors like maple bacon and orange cardamom, always treating the marshmallow as a blank canvas for creativity and joy.

It was an unforgettable chapter. And while we were deeply saddened to close the café due to a significant rent increase and persistent challenges with property management, we knew it was time to turn the page.

The heart of The Fancy Marshmallow Co. is still beating strong—now fully online. We’re continuing to craft our small-batch creations, release seasonal collections, cater special events, and pop up at local markets. Our mission hasn’t changed—we’re just bringing the sweetness to you in a new way.

And we’re not done dreaming. With our sights set on new cities, future pop-ups, and (maybe someday!) another magical brick-and-mortar, we can’t wait to keep growing with you.
